“A new project from Mornington Peninsula based winemaker David Chapman. Cinq à Sept is an aromatic vermouth made using a pinot noir base. Exploring the potential of this variety was a natural progression for David, who since establishing Allies Wine in 2003 has set out to make compelling site-driven pinot noir wines that showcase the diversity of the region.

The name, taken from a French expression (literally “five to seven”), refers to the two hour window between 5pm and 7pm where friends pause for a moment between the working day and home to enjoy a drink, or the more traditional French pastime where lovers meet for a tryst before going home to their families.”
