Hazel and Apple is the creation of two of the most recognized and recognizable figures in Irish bar hospitality, Sean Muldoon and Jillian Vose of New York’s legendary Dead Rabbit.
Together they are pouring their decades of experience and expertise into this, their own passion project.
The Hazel offers an authentic Irish pub ambiance, serving excellent pub grub plus local Charleston and South Carolina specialties. The Apple will retain some of The Hazel’s pub vibe but with an added element of relaxed elegance. The Apple will also be an event and private party space.
The new cocktail menu is heavily influenced by Irish mythology and W.B. Yeats poem, The Song of Wandering Aengus.
The poem portrays a place between worlds where dreams and reality and light and dark intertwine.
We’ve written a story that describes this other world and brought it to life using Ai generated images, typography and ogham script – the earliest known form of Gaelic. Old and new combined to create something unique.
The drinks menu will be a smaller insert, like a menu within a menu. Letterpressed and interchangeable.
Lots more work to come as we finalise the limited edition, hand numbered menus and begin to bring the Hazel and Apple brand to life, both online and in the bar itself.
