González Byass presents a new edition of Tío Pepe en Rama, the purest expression of the Jerez winery’s fino wine. As happens every spring, when nature awakens and life blossoms, the oenologist and master blender, Antonio Flores, with the help of his daughter Silvia, has carried out the selection of the best casks (‘botas’) from González Byass’s Bodega de la Constancia to represent the essence of Tío Pepe.
In this 16th edition, Tío Pepe en Rama gathers the best casks from the soleras of Jerez’s most emblematic vineyards (‘pagos’), Macharnudo and Carrascal – 92 casks that have been carefully selected to bring Tío Pepe en Rama to life, a wine that holds 190 years of history and tradition, notes the winery in a statement. The yeast, a key element in biological aging (‘crianza biológica’), once again demonstrates its power and vitality in this year’s edition. After a spring-like and rainy autumn and a mild and dry winter, the layer of flor (‘velo de flor’) has remained intact, healthy, and robust, giving Tío Pepe en Rama a unique and special character.
Tío Pepe en Rama presents a pale gold color with slight cloudiness, a result of the suspended flor. Its nose is intense and fragrant, with notes of chalk, talc, iodine, and salt, intertwined with aromas of dried fruits, chamomile, lemon, bakery, and fresh yeast. On the palate, it is complex, fresh, dry, savory, salty, and slightly bitter, leaving a long and persistent finish. Thanks to its gastronomic versatility, it is perfect to accompany special celebrations.
This highly expressive fino wine, recognized and awarded worldwide, is a cultural icon, a symbol of Jerez, and a family legacy. Due to its uniqueness, it is bottled in small quantities, and its design is inspired by the historical labels of Sherry, where this year the colors gold, green, and vine shoots evoking tradition predominate.
Inspired by the days when fino was consumed directly from the cask, Fino en Rama has not undergone the usual clarification and filtration processes. Tío Pepe en Rama is a wild, unfiltered wine that preserves all the strength and subtlety of its origin and aging.
